Portable complex carbohydrates?

Popcorn is a wholegrain and it travels well. Wholegrain breads like wholewheat and rye. Wholegrain crackers are also a good option. Spreads like nut butters and hummus go well on these. Brown rice, wholewheat pasta, quinoa can be cooked before hand and stored in plastic tubs then microwaved. The same is true for lentils and beans, which are good sources of complex carbs and protein which helps to balance blood sugar levels. Small portions of low sugar granola would also be a good option.
